To create these delicious Chocolate Brownies with Pecans, follow these simple steps:

Preheat the oven: Begin by preheating your oven to 180°C. Place a high-sided 21x28cm tray on the middle rack, adding a bit of water under the parchment paper for better adherence.

Melt the chocolate and butter: Break the dark chocolate into pieces and melt it in the microwave in 3 intervals, each for 30 seconds, stirring well between each interval. Ensure the butter is at room temperature, then add it cubed to the melted chocolate, mixing until smooth and homogeneous.

Eggs, sugar, and vanilla: In a separate bowl, beat the 2 medium eggs with the raw cane sugar until achieving a foamy mixture. Add a drop of natural vanilla extract and continue mixing until the mixture has gained some volume.

Incorporate melted chocolate and butter: Make sure both the butter and chocolate are at room temperature before adding the melted chocolate and butter mixture to the beaten eggs. Mix well until achieving a uniform consistency.

Add flour, cocoa, and salt: Sift 90g of flour and 20g of unsweetened cocoa powder onto the chocolate mixture, gently mixing until the dry ingredients are just incorporated. Add a pinch of salt and mix well.

Whole pecans: Add the whole pecans to the batter and mix well.

Pour into the tray: Pour the batter into the prepared tray and level it with a spatula.

Baking: Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out slightly moist with a few crumbs attached. Avoid overcooking for a soft texture.

Cooling and cutting: Allow the brownies to cool in the tray for about 15-20 minutes, then gently lift the parchment paper to transfer the brownies to a cooling rack. Once cooled, cut into desired squares.
